Cattle production is the backbone of agriculture in the Alleghany Highlands and the quality beef produced here is a result of factors unique to our region–cool season grazing, clean water, and producers that prioritize animal welfare.

Basic Beef Cuts

Alleghany Meats basic package has standard beef cuts, including various combinations of the following: Cross Cut Shank, Chuck Roast, Arm Roast, Brisket, Short Ribs (2 rib x 3”), Ribeye Steak or Rib Steak or Rib Roast, T-Bones or NY & Filet Mignon, Sirloin Steaks, Back Ribs, Bottom Round (Steak/Roast), London Broil Top Round (Steak/Roast), Eye of Round (Steak/Roast), Flank Steak, Skirt Steak, Sirloin Tip (Steak/Roast), Ground Beef (Chub bags), Beef Stew Meat.

With this package, the ground beef is packed in chubs (ground beef can be packaged in vacuum packs for additional fee), it costs extra to have steaks cubed.

Premium Beef Cuts

Alleghany Meats will prepare different, newer cuts in the package. Ground beef is vacuum sealed, cube steaks are included, and you can choose any number of steaks per package.

Cut options include, Cross Cut Shank, Chuck Roast (Boneless), Chuck-eye Steak, Arm Roast (Boneless), Ranch Steak, Brisket, Short Ribs, Ribeye or Rib Steak & Rib Roast, T-Bones or NY & Filet Mignon, Sirloin Steak, Sirloin cap (Steak/Roast), Baseball Steak & Tri Tip, London Broil (Steak/Roast), Bottom Round (Steak/Roast), Flank Steak, Skirt Steak, Eye of round (Steak/Roast), Flat Iron Filet , Ground Beef (Vacuum), Beef Stew Meat, Sirloin Tip (Steak/Roast), and Back Ribs.

Value-Added Processing

We offer value added beef products including hamburger patties, smoked bratwursts, brisket, and bacon (yes, beef bacon!).


Packaging

All beef cuts are vacuum-packed in clear plastic and labeled according to the cut or product in the package. Ground beef is sealed in vacuum packages (Premium Package) and sealed in chubs (Basic Package).

Proper treatment of livestock is critical to our success as a business and we continue to improve and adjust our processes as necessary to ensure that this critical step is performed correctly.
